


Use a bench scraper or an offset spatula to smooth out the frosting. Just be sure to label the cake with the date so you know how long its been in there. Either way, a double-wrapped cake will let you store it in the freezer for two to three months. Be sure to go all the way to the edges so that no cake is showing. Three: Seal the wrapped cake in a freezer bag. But it you want super smooth sides of the cake, a metal bench scraper is the easiest way to do it. Spread a thin layer of cream cheese frosting on the top and sides of the cake. I rarely do, as I like my cake to look a little more organic and homemade. But if you like to add ruffles, flowers, or trim to your cake, you need to have a supply of pastry bags and specialty tips. Pastry bags and tips: Like the turntable, I don’t use a lot of pastry bags and tips when making my cakes, mostly because I prefer a simpler aesthetic (like what I can make with a spoon!).And if you find yourself making more elaborately decorated cakes with fondant or piping, the turntable will quickly become your best friend! The ability to turn my cake as I frost makes life infinitely easier. Its best to work in a cool kitchen because the buttercream will sweat if you take it from cold to. When you are ready to finalize the icing remove the cake from the freezer and let it defrost to refrigerator temperature. Turntable: I don’t use my kitchen turntable that often, but every now and then when I’m trying to decorate a cake with an ombre pattern or in a circular pattern, I bust it out. This way, all of the crumbs end up in the first frosting layer (hence the term crumb coat) and never in the final layer. After baking, wrapping and freezing, fill and frost (a crumb coat)and refreeze if you will not be using the cake immediately.( I wrote all about it here.) The spatula spreads cake batter evenly in the pan, and it makes frosting the cake easier on your wrists too, as you don’t have to twist and contort the wrist as much. Crumb coating is basically a thin layer of frosting that traps the crumbs from the cake, so you dont end up with a crumby finished cake Most of the time. Offset spatula: You can get away with a standard butter knife but an offset spatula is one of my favorite cheap tools in the kitchen.
